When I asked the hubs what he wanted for dinner the other night, he asked for a chicken salad. Not just any chicken salad but a creamy chicken salad that has been made famous by an aunt who I love dearly and is like a mom to me.
I called her up to make sure I had the ingredients and measurements just right. I had tried this recipe once before but got a thumb’s down when the fam compared it to hers. No pressure there right? LOL
She’s been gracious enough to let me share this easy recipe with you. She didn’t think it was share worthy because it’s so easy. Little does she know easy is very popular nowadays! Are you ready for the easiest and creamiest chicken salad ever?
What You’ll Need
1 cup chopped dill pickles
1 cup chopped celery
2 cups real mayonnaise (you can also use fat-free mayo). You can also reduce the amount of mayo for a lesser creamy taste.
Salt and pepper to taste
Boil chicken breast until thoroughly cooked, drain and set aside to allow to cool down.
In a mixing bowl put add the chopped dill pickles and celery.
Once the chicken has cooled you can chop it up or shred it. I like to shred it up into bite sized pieces. Add to the mixing bowl.
Add the mayo, salt and pepper then mix together.
Add Some Crunch
For some extra crunch you can add walnuts or pecans. The fam prefers without the nuts to keep it just like she’s made it all these years. Like they say, if it’s not broken don’t fix it.
I served it with crackers or put it on some fancy bread or wrap. Either way it’s a salad that will definitely satisfy the hunger without spending too much time in the kitchen.
