I’m sure you’ve guessed by now I like easy, the easier the better. Especially when it comes to cooking dinner, the word “easy” is the first thing I look for.
But that doesn’t mean the meal doesn’t have to be hearty. Since everyone is home for Spring Break I thought I’d cook up something special for the fam. Here’s a quick and easy meatloaf recipe you might like. Don’t forget to stop by the Coupon Savings Center to see if you can find coupons to these ingredients or any of your favorite foods.
What You’ll Need To Make Meatloaf Muffins
1 pack ground chuck about 1 to 1.25 lbs. (I use an 85%/15% cut)
1/2 cup crushed crackers
1/2 cup chopped bel pepper
1/2 cup chopped onion
1 8 oz. can of tomato sauce
Preheat oven to 375°. In a large mixing bowl, add ground chuck, crackers, veggies, egg, and tomato sauce. Add salt and pepper to taste. With your hand combine the ingredients together until well blended.
Fill meat to fit in a muffin cup (make sure to use non-stick cooking spray to prevent sticking). You should be able to fill one 12 count muffin pan. Place in oven on the top rack and bake for one hour.
Tip: place a cookie sheet on the bottom rack in case there are any drippings.
Let it sit for about five minutes before serving. This goes great with mashed potatoes, brown gravy and a salad.
