I made this last week for the fam and promised to share it with you on the blog…well here it is!
Anticipating the start of the new month got me thinking about the upcoming holidays, especially my favorite, Thanksgiving. Oh my goodness. Before I knew it I was craving some turkey and dressing. November cannot come fast enough for this girl.
I wasn’t about to go get me a turkey and spend hours in the kitchen cooking up the side dishes. Besides, it’s still hot out there and running the oven and stove will only make it hotter. So I improvised and made a turkey casserole.

Here are the ingredients I used:
- 2 boxes of Stove Top Stuffing’s Cornbread dressing
- 1 box of cornbread mix. I use Jiffy cornbread mix because I love the sweet taste.
- 1 medium yellow onion
- 1 medium bel pepper
- 1/2 cup of chopped celery
- 1 package of turkey wings
Let’s Get Cookin’
Preheat the oven to 350 degrees.
Prepare the cornbread as directed and set aside.
Clean turkey meat then place in a pot and boil until fully cooked.
Cut up the onion and bel pepper. Sautee the onion, bel pepper and celery in butter then set aside.
In a mixing bowl empty the boxes of stuffing mix and add the sautéed veggies. Crumble the baked cornbread and add to the mixing bowl. Then debone and shred the turkey meat and add to the mixing bowl as well. Add some salt and pepper to taste.
Mix all the ingredients together until blended and pour contents into a baking dish. Take the broth from boiling the turkey and pour just enough it into the baking dish to mesh the ingredients together. Put that baby in the oven and bake for about 20 minutes and voila, dinner is served!
Serve It Up
I wasn’t going to all out with all the Thanksgiving trimmings but I did make gravy and served with a salad and dinner roll.
